Ingredients for 1 serving:
• 100g firm tofu, crumbled
• 1/2 teaspoon turmeric powder
• 1/4 teaspoon cumin powder
• Salt and pepper, to taste
• 1/2 teaspoon olive oil
• 1/4 cup diced onion
• 1/4 cup diced bell pepper
• 1/4 cup diced tomato
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped fresh cilantro
Directions:
1. In a small bowl, mix the crumbled tofu, turmeric powder, cumin powder, salt, and pepper.
2. In a pan, heat the olive oil over medium heat.Add the diced onion and bell pepper, and sauté for 3-4 minutes until softened.
3. Add the tofu mixture and diced tomato to the pan, and cook for an additional 2-3 minutes,
stirring occasionally.
4. Remove from heat and top with chopped parsley and cilantro.
5. Serve and enjoy!
