Ingredients:

  • Olive oil
  • 1 red onion, diced
  • ½ cup leeks, diced
  • 1 cup carrots, chopped
  • ½ red pepper, diced
  • ½ cup split peas
  • 1 cup brown lentils
  • ½ cup small pasta rounds
  • 3-4 cups water
  • 2-3 packets Tony Ferguson Instant Soup Rich Beef & Veg Flavour
  • 1 cup coconut milk

For the Chickpea Dumplings:

  • ½ cup chickpea flour
  • ⅓ cup self-rising flour
  • 1 tsp baking powder
  • Pinch of salt
  • Approximately ¾ cup sparkling or plain water

Method:

  1. Start the Soup: In a large pan, heat a dollop of olive oil over medium heat. Add the diced onion, leeks, and carrots, sautéing until they begin to soften. Add the red pepper, split peas, lentils, Tony Ferguson Instant Soup Rich Beef & Veg Flavour, pasta, and enough water to cover the ingredients. Stir to combine.
  2. Simmer the Soup: Allow the mixture to simmer, stirring occasionally, until the peas and lentils are tender and the soup has thickened, about 20-30 minutes. Stir in the coconut milk to blend thoroughly.
  3. Prepare the Dumplings: While the soup simmers, prepare the dumpling batter by mixing chickpea flour, self-rising flour, baking powder, and a pinch of salt in a bowl. Gradually add water, stirring until the batter is smooth yet thick.
  4. Cook the Dumplings: Drop teaspoonfuls of the dumpling batter into the simmering soup, ensuring they have enough space to cook separately. Cover and let them simmer for about 10 minutes, or until firm and cooked through.
  5. Serve: Serve the soup hot, garnished with a drizzle of coconut milk and fresh herbs for added flavour.
