  • ½ cup icing sugar
  • 1-2 tablespoons coconut milk

Method:

  1. Prepare the Dough: Grate the cold margarine into the dry ingredients using a cheese grater. Mix with two forks until crumbly. Add the milk, Tony Ferguson Honey, and vanilla extract to the dry ingredients. Use a pastry cutter or fork to mix until a moist, shaggy dough forms.
  2. Shape the Scones: Turn the dough onto a parchment-lined baking sheet. Gently flatten it into a 2cm-thick circle using your hands or a rolling pin. Place the tray in the freezer for 10 minutes while preheating the oven to 180°C.
  3. Cut and Bake: Remove the tray from the freezer and use a sharp knife or pizza cutter to slice the dough into 8 even triangles. Separate the scones on the baking sheet, leaving space between them. Sprinkle each scone with sugar and bake for 14-16 minutes until slightly browned.
  4. Cool and Decorate: Let the scones cool on a wire rack. Drizzle with frosting made by mixing icing sugar and coconut milk, and top with pecan nuts for added texture and flavour.
