Ingredients:
For the scones:
- ½ cup cold, cubed margarine
- 2 cups pastry flour (or regular all-purpose flour/oat flour)
- ¼ cup Tony Ferguson Pure Hydrolysed Collagen
- ¼ cup brown sugar or coconut sugar
- 2 teaspoons baking powder
- 2 teaspoons Tony Ferguson Ground Ginger Spice
- 1 teaspoon Tony Ferguson Cinnamon Spice
- ½ teaspoon nutmeg
- ½ tsp salt
- ½ cup plant-based milk
- 2 tablespoons vanilla extract
- 5 tablespoons Tony Ferguson Honey
- Sugar and pecan nuts for decoration
For the frosting:
- ½ cup icing sugar
- 1-2 tablespoons coconut milk
Method:
- Prepare the Dough: Grate the cold margarine into the dry ingredients using a cheese grater. Mix with two forks until crumbly. Add the milk, Tony Ferguson Honey, and vanilla extract to the dry ingredients. Use a pastry cutter or fork to mix until a moist, shaggy dough forms.
- Shape the Scones: Turn the dough onto a parchment-lined baking sheet. Gently flatten it into a 2cm-thick circle using your hands or a rolling pin. Place the tray in the freezer for 10 minutes while preheating the oven to 180°C.
- Cut and Bake: Remove the tray from the freezer and use a sharp knife or pizza cutter to slice the dough into 8 even triangles. Separate the scones on the baking sheet, leaving space between them. Sprinkle each scone with sugar and bake for 14-16 minutes until slightly browned.
- Cool and Decorate: Let the scones cool on a wire rack. Drizzle with frosting made by mixing icing sugar and coconut milk, and top with pecan nuts for added texture and flavour.
