Ingredients:

For the salad

  • 1½ cups Israeli couscous
  • 1-2 cups roasted sweet potatoes (we used purple for extra flair)
  • 1 cup roasted baby tomatoes or sun-dried tomatoes
  • 1 cup cooked brown lentils
  • 1 cup green olives
  • Feta cheese, crumbled, to serve

Method:

  1. Begin by preparing the salad ingredients. In a large bowl, combine the Israeli couscous, roasted sweet potatoes, roasted baby tomatoes, cooked brown lentils, and green olives. Mix well to distribute the ingredients evenly.
  2. For the caramelised pumpkin seeds, preheat your oven to 180 degrees Celsius. Line a baking tray with parchment paper and spread the Tony Ferguson Pumpkin Seeds evenly across it. Drizzle Tony Ferguson Honey over the seeds, ensuring they are well coated. Bake for approximately 10 minutes, or until the seeds are golden brown and caramelised. Allow them to cool on the tray until hardened.
  3. While the pumpkin seeds are cooling, prepare the dressing. In a small bowl, whisk together the Tony Ferguson Lemon Juice, grapeseed, olive, or avocado oil, honey, Dijon mustard, balsamic glaze, salt, and pepper until well combined.
  4. Pour the dressing over the salad ingredients and toss gently to coat everything in the dressing.
  5. To serve, sprinkle the caramelised pumpkin seeds over the salad, along with crumbled feta cheese for an extra burst of flavour and creaminess.
