Energising Espresso Cacao Bites

These energising espresso cacao bites are perfect for a quick energy boost when you’re on the go. They’re easy to make and only require a few simple ingredients.

To make these snack bites, you’ll need:

  • 1 1/2 cups Tony Ferguson Coconut Flakes
  • 1 1/2 cups Tony Ferguson Almond Flour
  • 2 tbsp flax meal
  • 3 tbsp Tony Ferguson Chia Seeds
  • 1/3 cup smooth peanut butter
  • 3-4 tbsp coconut butter
  • 1/4 cup Tony Ferguson Organic Cacao Powder
  • 1 pinch sea salt
  • 2-3 pitted dates, soaked in water for 5 minutes if hard
  • 1 tsp espresso coffee grounds

How to make it:

  1. To start, simply add all of the ingredients to a high-speed blender and blend until a thick paste forms. If the mixture is too thick, you can thin it out by adding more melted coconut butter.
  2. Using a small ice cream scoop, scoop the mixture out and roll it into balls.
  3. Place the balls in the fridge for 3 hours or in the freezer for 45 minutes before eating.
  4. Store in an airtight container in the fridge.
