Lemon Curd Jam Buns: A Soft, Sweet, and Citrusy Treat

Ingredients:

For the Dough:

  • 115g dairy-free butter or melted coconut oil
  • 400ml dairy-free milk
  • 50g caster sugar or light brown sugar
  • 1 10g sachet active dry yeast
  • 500g plain flour (plus extra for dusting)
  • 2 tsp lemon zest

  • Sugar
  • Lemon zest
  • Fresh raspberries or strawberries
  • Chopped chocolate

Method:

  1. Prepare the Dough: In a bowl, add the flour. In a separate container, melt the butter or coconut oil, then mix in the yeast and 1 tbsp sugar. Let it sit for 5-10 minutes until bubbly. Gradually add the wet ingredients to the dry and knead the dough until smooth. Lightly oil the bowl, place the dough inside, and let it rise for about 1 hour or until doubled in size.

  2. Make the Lemon Curd: In a saucepan, whisk together all the curd ingredients until smooth and free of lumps. Bring to a gentle simmer, whisking continuously, until thickened. Let it cool.

  3. Assemble the Buns: Preheat the oven to 180°C. Roll the dough out on a floured surface into a rectangle (about 1.5 cm thick). Spread a generous layer of jam over the dough, then sprinkle with sugar and more lemon zest. Roll into a log and slice into rounds using a sharp knife or pizza cutter.

  4. Bake the Buns: Place the buns into a buttered baking dish, leaving space between them. Sprinkle with extra sugar. Bake for 40-45 minutes or until golden brown and bubbly.

  5. Finish & Serve: Once baked, let the buns cool slightly. Drizzle with lemon curd and top with fresh berries and chopped chocolate. Serve warm and enjoy!
