Stuffed Chicken Breast: A Healthy and Flavourful Delight
Ingredients
- 4 boneless, skinless chicken breasts (about 400g total)
- 225g chopped spinach
- 115g diced mushrooms
- 115g diced onions
- 115g diced bell peppers
- 2 cloves of minced garlic
- 60g grated Parmesan cheese
- Salt and pepper, to taste
- Olive oil spray
Directions
- Preheat your oven to 190°C.
- In a frying pan over medium heat, sauté the spinach, mushrooms, onions, bell peppers, and garlic until they are tender. Once they are cooked, remove the pan from heat and mix in the grated Parmesan cheese.
- Cut a pocket on the side of each chicken breast and stuff it with the vegetable mixture.
- Grease a baking dish with olive oil spray and place the stuffed chicken breasts in the dish. Season with salt and pepper to taste.
- Bake for 25-30 minutes, or until the chicken is fully cooked.
Serve it with a side of vegetables or a salad to make a complete meal that’s both healthy and delicious.
