Layered Maca Mars-Inspired Ice Cream Bars (Vegan)
Ingredients
Base layer:
- 1 cup coconut flour
- 1 cup almond flour
- ⅓ cup coconut oil
- ¼ cup honey
- 1 tsp vanilla extract
- Pinch of salt
- Optional: splash of milk to help combine
Cookie caramel dough layer:
- 1½ cups crunchy peanut butter
- ¼ cup honey
- ½ cup chocolate chips
- Pinch of salt
Ice cream layer:
- 1 cup raw cashews (soaked)
- 300 ml coconut cream
- 1–2 teaspoons coconut oil
- 1 teaspoon vanilla extract
- ¼ cup honey
- 1 teaspoon Tony Ferguson Black Maca Powder
- Pinch of salt
For coating:
- Melted dark chocolate
Directions
- Mix all base ingredients until smooth. Add a splash of milk if needed. Press into a parchment-lined tray and freeze.
- Stir peanut butter, honey, salt, and chocolate chips together. Spread over the frozen base and return to the freezer.
- Blend soaked cashews with coconut cream, oil, vanilla, honey, salt, and maca until ultra-smooth. Pour over the caramel layer and freeze until solid.
- Slice into bars, dip in melted chocolate, and return to the freezer to set. Store individually for the ultimate grab-and-go treat
