You’ll build them up in three layers. Cookie base, caramel crunch, and a dreamy maca-infused ice cream. All before dipping them in melted chocolate for that final snap.

Layered Maca Mars-Inspired Ice Cream Bars (Vegan)

Ingredients

Base layer:

  • 1 cup coconut flour
  • 1 cup almond flour
  • ⅓ cup coconut oil
  • ¼ cup honey
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: splash of milk to help combine

Cookie caramel dough layer:

  • 1½ cups crunchy peanut butter
  • ¼ cup honey
  • ½ cup chocolate chips
  • Pinch of salt

Ice cream layer:

For coating:

  • Melted dark chocolate

Directions

  1. Mix all base ingredients until smooth. Add a splash of milk if needed. Press into a parchment-lined tray and freeze.
  2. Stir peanut butter, honey, salt, and chocolate chips together. Spread over the frozen base and return to the freezer.
  3. Blend soaked cashews with coconut cream, oil, vanilla, honey, salt, and maca until ultra-smooth. Pour over the caramel layer and freeze until solid.
  4. Slice into bars, dip in melted chocolate, and return to the freezer to set. Store individually for the ultimate grab-and-go treat
