Mini MCT Banana Bread with Chocolate Chips

  1. Preheat oven to 180°C.
  2. Mash the banana in a bowl. Add the coconut water (or milk), MCT oil, and honey. Whisk until smooth.
  3. Fold in oat flour, cacao powder, baking powder, and salt until you have a thick batter.
  4. Scoop the batter into greased ramekins or muffin tins. Top with chocolate chips.
  5. Bake for 10–12 minutes, or until just set in the centre.
  6. Let cool slightly before digging in. Best enjoyed warm!



Serving Tip:
Top with a dollop of Greek yogurt or a drizzle of nut butter for extra indulgence.
