Mini MCT Banana Bread with Chocolate Chips
Ingredients
- 1 medium banana
- ½ cup coconut water or milk
- ¼ cup Tony Ferguson Pure MCT Oil
- 1–2 tablespoons Tony Ferguson Honey
- 1 heaped cup oat flour
- ¼ cup Tony Ferguson Organic Cacao Powder
- 1 teaspoon baking powder
- ¼ tsp salt
- Chocolate chips, to top
Directions
- Preheat oven to 180°C.
- Mash the banana in a bowl. Add the coconut water (or milk), MCT oil, and honey. Whisk until smooth.
- Fold in oat flour, cacao powder, baking powder, and salt until you have a thick batter.
- Scoop the batter into greased ramekins or muffin tins. Top with chocolate chips.
- Bake for 10–12 minutes, or until just set in the centre.
- Let cool slightly before digging in. Best enjoyed warm!
Serving Tip: Top with a dollop of Greek yogurt or a drizzle of nut butter for extra indulgence.
