MCT Nut Clusters: A Delicious and Easy Snack to Keep on Hand
Ingredients
- 1½ cups roasted almonds (or nuts of choice).
- ½ cup smooth peanut butter.
- ¼ cup Tony Ferguson Organic Cacao Powder.
- ¼ cup Tony Ferguson Organic Virgin Coconut Oil.
- ¼ cup Tony Ferguson Pure MCT Oil.
- ⅓ cup Tony Ferguson Honey or date syrup.
Directions
- Melt the Base: In a saucepan over low heat, melt together the coconut oil, honey (or date syrup), MCT oil, and peanut butter until smooth.
- Mix It All In: Remove from heat and stir in the cacao powder until fully incorporated. Fold in the roasted nuts until evenly coated.
- Scoop and Set: Scoop heaped tablespoons of the mixture onto a parchment-lined tray. Place in the freezer and allow to set.
- Serve and Store: Enjoy straight from the fridge or freezer whenever you need a quick bite!
