Energising Espresso Cacao Bites: A Quick and Tasty Boost
Ingredients
- 1½ cups Tony Ferguson Coconut Flakes
- 1½ cups Tony Ferguson Almond Flour
- 2 tbsp flax meal
- 3 tbsp Tony Ferguson Chia Seeds
- ⅓ cup smooth peanut butter
- 3-4 tbsp coconut butter
- ¼ cup Tony Ferguson Organic Cacao Powder
- 1 pinch sea salt
- 2-3 pitted dates, soaked in water for 5 minutes if hard
- 1 tsp espresso coffee grounds
Directions
- Start by adding all of the ingredients to a high-speed blender and blend until a thick paste forms. If the mixture is too thick, you can thin it out by adding more melted coconut butter.
- Using a small ice cream scoop, scoop the mixture out and roll it into balls.
- Place the balls in the fridge for 3 hours or in the freezer for 45 minutes before eating.
- Store in an airtight container in the fridge.
