Vegan Tofu Scramble: A Nutritious Breakfast Delight

Ingredients

  • 100g firm tofu, crumbled
  • ½ teaspoon Tony Ferguson Turmeric Spice
  • ¼ teaspoon ground cumin
  • Salt and pepper, to taste
  • ½ teaspoon olive oil
  • ¼ cup diced onion
  • ¼ cup diced bell pepper
  • ¼ cup diced tomato
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh coriander

Directions

  1. In a small bowl, mix the crumbled tofu, Tony Ferguson Turmeric Spice, ground cumin, salt, and pepper.
  2. In a pan, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes until softened.
  3. Add the tofu mixture and diced tomato to the pan, and cook for an additional 2-3 minutes, stirring occasionally.
  4. Remove from heat and top with chopped parsley and coriander.
  5. Serve and enjoy!
