Vegan Tofu Scramble: A Nutritious Breakfast Delight
Ingredients
- 100g firm tofu, crumbled
- ½ teaspoon Tony Ferguson Turmeric Spice
- ¼ teaspoon ground cumin
- Salt and pepper, to taste
- ½ teaspoon olive oil
- ¼ cup diced onion
- ¼ cup diced bell pepper
- ¼ cup diced tomato
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh coriander
Directions
- In a small bowl, mix the crumbled tofu, Tony Ferguson Turmeric Spice, ground cumin, salt, and pepper.
- In a pan, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes until softened.
- Add the tofu mixture and diced tomato to the pan, and cook for an additional 2-3 minutes, stirring occasionally.
- Remove from heat and top with chopped parsley and coriander.
- Serve and enjoy!
